You are providing lots of new settings for different blocks, but you are taking away the good features that default Wordpress block editor already have. Among them one of the best feature is theme.json defined variables for colors, fonts etc.
When we choose color manually for each block, this will be a very tedious process to change it later when we changing color scheme as a whole. But if you allow to choose from variables defined in json or site editor, this will make the whole design much flexible and easy to change. Without this feature added , most of designers like us, who want to edit site in future more easy way will avoid to use this plugin. So please look into this matter.
You should improve the settings but not remove the features that blocks already have.
